Watermelon & feta salad

Pretty as a starter, this also makes a refreshing side dish

This quick and easy salad is light and fresh. Bursting with sunny pink watermelon and a touch of salty feta, it makes a pretty party starter when served on individual spoons and a brilliant side dish presented in your favourite serving bowl.

Put balsamic vinegar, a good pinch of salt and pepper and any reserved orange juice in very small saucepan. Slowly bring to boil, then reduce heat. Simmer gently for about 2 minutes or until it has reduced and thickened. Remove from heat and allow to cool completely.

Divide watermelon, feta and orange between your serving spoons. Dress each with a few drops of the reduced balsamic dressing, top with mint and drizzle over reserved oil from feta.
