Sophie Hansen’s baking captures the year-round joys of living on a farm outside of Orange. ‘Simple, seasonal and generous,’ are the three words she uses to describe her approach to cooking – and baking particularly. In a region famed for its orchards and vineyards, seasonal produce tends to make itself known. Fruit is often a front-running ingredient in Sophie’s baking. She uses it to cut through sweetness, and loves stone fruit especially for the bursts of acidity it brings to sweet bakes.
