Jessie Knierum and Aaron Morgan

Cygnet, Tasmania, is a town of 4000 people and one bakery – Poolish & Co. In the few short years since Aaron Morgan, Jessie Knierum and Chelsea Martin fired up the wood oven, they’ve put themselves at the heart of the community. Aaron is the viennoiserie master, Jessie is the bread maker, and Chelsea (Jessie’s partner) runs the business and front of house. Their starting point was clear, says Aaron: “Bread and pastry and everything else will work out. We’ll keep it simple.”
