Roast vegetables are often underrated and relegated to being the side dish to a roast pork, chicken or beef that steals all the thunder.
The reality is that a roast dinner would be nothing without its partner-in-crime: baked vegetables. Although they’re delicious on their own, they can become even more exciting by adding simple ingredients.
Salt, pepper and oil are obvious for seasoning your veggies, but here are five other easy additions to make the best roasted vegetables.
Flavoured oil
Swap your plain olive oil for something infused with a little more flavour (think garlic, chilli or truffles) to add another level to your roast veg.
Citrus fruits
After roasting your vegetables, add a zesty zing by squeezing a lemon or lime over them.
Cheese
Crumbling cheese over your roast vegetables will make a huge difference. Think feta, goats or Parmesan cheese for a combo that’ll make you go ‘Mmmm’.
Curry sauce
A simple way to spice up your vegetables is by adding them to a curry sauce with chickpeas for a hearty meat-free meal.
Bacon
Dice some bacon and roast it in the same tray as your vegetables. Your bacon will get crispy and be delicious stirred through your veg.
What temperature is best for baking vegetables?
To bake vegetables, preheat your oven to 200°C (180°C fan forced). Line a large tray with baking paper, then spread your prepared vegetables on it. Cook for 30 minutes, turning them halfway through.
